Caramelized Onion, Roasted Garlic & Gorgonzola Dip
Oh the ever ubiquitous onion dip, seen at nearly every potluck and tailgating party. Although the original recipe is in fact delicous, I wanted to fancy it up a bit by using bold flavors like roasted garlic and gorgonzola cheese, with the wonderful sweetness of caramelized onions, creating a delightfully deep and complex flavor combination.
Here's what you need:
2 Medium Onions
6 oz. Gorgonzola
1 Head of Garlic
1 tsp. Brown Sugar
1 pinch Italian Seasoning
1/2 c. Olive Oil Mayonnaise or Canola Mayonnaise
1/2 c. Plain Greek Yogurt
1 tbsp. Olive Oil plus 1 tsp.
1 tsp. Chopped Parsley
Here's how to make it:
Preheat your oven to 400 degrees. Peel the onions and cut them in half, then thinly slice. Heat the tbsp. olive oil in a medium sized skillet and add the onions, brown sugar, Italian seasoning, a pinch salt and pinch pepper. Cook the onions over medium-low heat until they are a deep golden brown, this should take about 20 minutes (trust me, it's worth the wait!). In the meantime, wrap the garlic head in tin foil with 1 tsp. olive oil, and roast in the oven for about 20 minutes until soft. Once it is cool enough to handle, remove the garlic cloves from their paper wrapping and transfer to a medium bowl, add the yogurt and mayo, then smash together vigorously with a fork. Stir the onions along with 3 oz. of the gorgonzola into the garlic mixture, then season with salt and pepper. Spread the dip into an oven-proof casserole dish, and top with the remaining gorgonzola and bake in the oven until hot and the cheese is melty. Sprinkle with parsley and enjoy with your favorite crackers or crostini.
